recipe: BACK TO SCHOOL FLAPJACK

You don't need to be going back to school to enjoy this foolproof flapjack, but if you are, you definitely deserve it. Fuel your mornings or pick ups, just chuck a few of these in the lunchbox and you're sorted...

INGREDIENTS

  • 200g butter

  • 100g golden syrup

  • 100g brown sugar

  • 300g rolled oats (use gluten free oats if you would like recipe to be gluten free)

  • pinch of salt

    optional inclusion:

  • 50g chopped nuts

  • 25g chocolate chips

  • 25g dried/fresh fruit

    optional topping:

  • 100g dark chocolate 

  • 25g coconut oil 

METHOD

  • oven on at 180

  • butter/line  20cm oven tray

  • melt butter in pan, add in sugar and syrup and stir together

  • add oats 

  • if adding inclusions let mixture cool a while then stir in added extras

  • place all in tray and smooth down surface

  • bake in oven for 20-30 mins or until golden brown 

  • If adding chocolate topping, heat chocolate and coconut oil in a pan until melted and smooth, don't boil!

  • pour over flapjack once it has cooled

  • Slice and enjoy!
