RECIPE: SCONES
The perfect companion to a cuppa, picnic, afternoon treat, elevenses… basically any time. Makes a batch of 9 large or 12 small scones, depending on your cutter size.
Little ones will love mixing the ingredients and cutting the rounds, and everyone else can enjoy the jam or cream first debate…
ingredients
450g self raising flour
200g butter
2tsp baking powder
50g sugar
Pinch of salt
3 eggs (2 for scone mix, 1 for glaze)
Splash of milk
method
Preheat your oven to 200 degrees celsius
Place all dry ingredients into a large mixing bowl
Cut butter into small cubes and with your fingers mix into the dry ingredients until it resembles breadcrumbs
Add eggs and a splash of milk and bring the dough together - be careful it doesn't get too wet and avoid overworking
Tip out onto a floured work surface and roll/pat out to roughly 1 inch thick
Use a cutter or a glass to cut out scones
Place onto a parchment lined baking tray
Brush with egg wash and sprinkle with a little granulated sugar if you like
Bake for 12-14 mins or until golden brown and the middle is cooked (if pierced with a knife, it should be clean when removed)
Cool and serve with clotted cream and your favourite jam!
