RECIPE: cheese straws
Aside from the main event, the festive season is one of constant grazing and party nibbles. These cheese straws are perfect; savoury, moreish and fool-proof.
INGREDIENTS
For the dough…
80g plain white flour + extra for dusting
20g wholemeal/white spelt
2g or 1/2tsp salt
2g or 1/2tsp paprika or other herb / spice of your choice!
50g butter - cut into small cubes
50g strong cheddar - finely grated
1 egg yolk
25ml whole milk
For the egg wash…
1 whole egg
Splash of milk
For sprinkling on pre bake…
50g parmesan - finely grated
1tsp crushed seasalt flakes
1/2tsp herb or spice of your choice
METHOD
Preheat your oven to 180
Line two baking sheets with parchment
In a mixing bowl combine flours, salt and paprika / chosen herbs and stir together
Add cubed butter and gently combine with your fingertips until the mix resembles breadcrumbs
Add grated cheddar, egg yolk and milk and combine thoroughly - but be careful not to overwork the dough!
Once combined, cling film the dough and place in the fridge to rest for 35-45 mins
While your dough chills, prepare your egg wash; beat your egg and milk together in a small bowl and set aside
Roll the dough on a lightly floured work surface to approximately 25 x 15 cm rectangle, 5mm thick. With a sharp knife cut out your straws (we get roughly 24 out of this batch)
Place on your prepared trays and brush with egg wash
Sprinkle over the grated parmesan herbs or spices and the crushed salt
Bake for 8-10 mins or until light golden brown
